Nestled in the picturesque region of Aix-en-Provence, Gilles Brassart's passion for food was ignited by the simple, fresh flavors that surrounded him in his childhood kitchen. This love affair with food traveled across continents, as Gilles established himself in the bustling culinary scene of San Francisco, where he successfully ran two restaurant and bar projects. It is there where he met his wife Andrea.

A Dream Takes Root in Calgary

In 2008, Gilles and Andrea returned to Andrea's hometown, Calgary, with a vision to create a culinary haven that celebrated their love for French cuisine. As they welcomed their daughter Lola-Rose into the world, another dream was taking shape - Cassis Bistro. A collaboration with Executive Chef and partner Dominique Moussu, this cozy bistro offers an accessible approach to the rich flavours of southern France.

Cassis Bistro: A Culinary Experience Rooted in Connection

At the heart of Cassis Bistro lies the belief that meaningful conversations unfold around a table filled with good food, wine, and company. Gilles Brassart says, "We wanted to offer a casual space to share fresh, delicious, approachable French cuisine. We believe that all important and meaningful conversations happen at the table, that table should make you feel like you are at home, whether you are with a group of people or dining alone. That table should always include good food, good wine, and good conversation."

Chef Dominique Moussu: A Michelin Star Background

Hailing from Brittany, France, Chef Moussu's culinary journey began with an apprenticeship at a Michelin star restaurant after completing his Brevet d'Etudes Professionelles. His career took him across Europe, cooking in luxury hotels like The Savoy in London and the historic Le Château de Loc Guenolé in Kervignac, Brittaney. As Cassis Bistro's Executive Chef, Moussu's deep knowledge of local producers and high-quality regional products shines through in his exquisite cuisine.
